Creamed Chipped Beef

Yield: 50 one-half cup servings

Ingredients

Directions

  1. Discard tough fibrous portions and undesirable yellow fat from beef.
  2. Heat fat in large saucepan until it bubbles, then add beef and cook until edges of beef curl.
  3. Add flour.
  4. Blend well, then add water.
  5. Boil until sauce begins to thicken, stirring constantly.
  6. Add milk and pepper and continue cooking 5 minutes longer, or until thickened.
  7. Serve on toast.
  8. Creamed chipped beef is also good served on mashed or baked potatoes.
