Cream Filling for Washington Pie

Ingredients

  • 2/3 cup sugar
  • 1 1/2 cup milk
  • 1/3 cup flour
  • 1 egg yolk
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon lemon extract

Directions

  1. Mix thoroughly the sugar, salt and flour.
  2. Gradually add the milk, stirring constantly.
  3. Pour into the top of a double boiler, and cook until very thick.
  4. Add the egg-yolk, vanilla and lemon extract, and cook two minutes.
  5. Beat until creamy and cool.
  6. Spread on the cake.
  7. Serve washington pie with whipped cream if desired.
