Corn and Rice Muffins
Ingredients
- 2/3 cup hot milk
- 1 cup cooked rice
- 1/2 cup corn meal
- 2 tablespoon shortening
- 1 tablespoon brown sugar, or molasses
- 1/2 cup flour
Directions
- Mix hot milk and cooked rice.
- Work with a fork to separate the grains.
- Add corn meal, shortening, salt, and brown sugar.
- Let cool, then add flour and baking powder.
- Bake.
