Corn and Rice Muffins

Ingredients

  • 2/3 cup hot milk
  • 1 cup cooked rice
  • 1/2 cup corn meal
  • 2 tablespoon shortening
  • 1 tablespoon brown sugar, or molasses
  • 1/2 cup flour

Directions

  1. Mix hot milk and cooked rice.
  2. Work with a fork to separate the grains.
  3. Add corn meal, shortening, salt, and brown sugar.
  4. Let cool, then add flour and baking powder.
  5. Bake.
