Quaker Muffins

Yield: 12 large muffins



  1. Set oven for hot, 400f.
  2. Cream shortening and sugar until light and fluffy: stir in eggs, then corn meal.
  3. Mix and sift flour, baking powder, and salt.
  4. Stir currants into flour mixture.
  5. Add to corn meal mixture.
  6. Add milk; stir just enough to moisten.
  7. Spoon into greased muffin pans.
  8. Bake 25 minutes.
