Cheese Torte - Filling

Ingredients

  • 6 eggs, separated
  • 6 tablespoon flour
  • 1/8 teaspoon salt
  • 1 1/2 cup sugar
  • 2 1/4 pound dry cottage cheese, forced through sieve or blended
  • 1 1/2 cup heavy cream
  • 1 teaspoon vanilla, or juice and rind of one lemon

Directions

  1. Beat egg yolks until thick.
  2. Add the flour, salt, cottage cheese, lemon juice and rind (or vanilla), and one cup of sugar.
  3. Beat until smooth, adding the cream slowly.
  4. Beat the egg whites until foamy.
  5. Gradually add remaining 1/2 cup sugar.
  6. Beat until stiff.
  7. Fold into cheese mixture.
  8. Pour into crust.
  9. Sprinkle remaining zweiback crumbs on top.
  10. Bake at 325f for one hour.
