Cheese Souffle

Yield: 4 servings

Ingredients

Directions

  1. Set oven for slow, 300f.
  2. Heat milk but do not scald.
  3. Melt butter or margarine in top of double boiler, blend in flour, salt, cayenne.
  4. Add heated milk; stir over hot water until smooth and thickened.
  5. Slice cheese into sauce; stir until cheese melts.
  6. Remove from heat.
  7. Beat egg yolks with a fork until well blended.
  8. Add a little of the cheese sauce; stir mixture into remaining cheese sauce.
  9. Beat egg whites stiff but not dry; fold in cheese sauce gently but thoroughly.
  10. Turn into ungreased 1 1/2-quart casserole to within 1 inch of top (if any is left, bake separately in small, ungreased baking dish).
  11. Make a shallow path, using a teaspoon about 1 inch in from edge of casserole.
  12. Bake 1 1/4 hours.
  13. Do not open oven while baking.
  14. Serve at once.
