Candied Sweet Potatoes

Ingredients

  • 6 large sweet potatoes
  • 1 cup water
  • 1 cup brown sugar
  • 1 teaspoon salt
  • 1 tablespoon butter

Directions

  1. Wash the potatoes thoroughly.
  2. Cook in boiling water until tender when pierced with a knitting needle.
  3. Drain and peel when cool enough to handle.
  4. Cut in slices lengthwise, three- fourths of an inch thick.
  5. Make a syrup by boiling the sugar, butter and water five minutes.
  6. Lay the potatoes in a pan, sprinkle with salt and pour the syrup over them.
  7. Cook in a moderate oven until the potatoes are browned, basting frequently.
