Broiled Beef Steak

Ingredients

  • steak
  • butter
  • salt
  • pepper

Directions

  1. Wipe a porterhouse steak with a damp cloth and trim it neatly; have the broiler well heated; lay the steak on it, and place as near the flame as possible, without having it catch fire.
  2. As soon as the surface is seared turn and sear on other side; then place broiler so that the steak is 3 or 4 inches from the flame.
  3. If the steak is 1 inch thick, cook from 8 to 10 minutes, turning 2 or 3 times.
  4. Place on a hot plate, spread with butter and sprinkle with salt and pepper.
