Bettina’s Sponge

Ingredients

  • 2 teaspoon granulated gelatin
  • 1 cup boiling water
  • 1 tablespoon cold water
  • 1/2 cup whipped cream
  • 4 tablespoon sugar
  • 6 cocoanut macaroons, crushed
  • 1 tablespoon lemon juice
  • 8 candied cherries, cut fine
  • 2 tablespoon nut meats, cut fine

Directions

  1. Add the cold water to the gelatin and allow it to stand five minutes.
  2. Add the sugar and the lemon juice.
  3. Mix well, and add boiling water.
  4. When thoroughly dissolved, allow to cool.
  5. When the mixture begins to congeal, or thicken, add the whipped cream, crushed macaroons, cherries and nut meats.
  6. Beat until the mixture begins to thicken.
  7. Pile lightly into a glass dish and set away to harden for one hour.
