Angel Cake

Ingredients

  • 8 large egg whites
  • 1 1/4 cup granulated sugar
  • 1 cup flour
  • 1/2 teaspoon cream of tartar
  • 1 pinch salt, added to eggs before whipping

Directions

  1. Flavor to taste.
  2. Sift flour before measuring, then sift five times.
  3. Sift sugar, whip eggs to a foam and add cream tartar.
  4. When eggs are well beaten, add sugar, then flavoring and lastly the flour.
  5. Bake in pans which have never been greased, but floured.
  6. Oven must be moderate.
  7. Requires 20 to 40 minutes to bake, according to temperature of oven.
