Zitny Rohlicky (Rye Rolls)

Ingredients

  • 2 cup milk
  • 2 eggs
  • 1/2 cup lard
  • 14 cup brown sugar
  • 2 tablespoon molasses, or syrup
  • 1/2 teaspoon baking soda
  • 2 cup rye flour
  • 3 cup white flour
  • 1 1/2 tablespoon fresh yeast, or 2 pkgs. dry
  • 1 teaspoon caraway seed
  • 2 teaspoon salt

Directions

  1. Dissolve yeast in lukewarm milk.
  2. Add lard and salt.
  3. Add beaten eggs, molasses, soda, caraway seed, and half of flour.
  4. Beat well.
  5. Add remaining flour and mix dough until smooth.
  6. Let rise until doubled.
  7. Turn dough onto board.
  8. Shape into balls.
  9. When raised, form into crescents.
  10. Brush with melted butter.
  11. Let rise.
  12. Bake in hot oven 400-425f for about 15 minutes or until done.
