White Plum Pudding

Ingredients

  • 1 1/2 quart evaporated milk
  • 1 1/2 quart water
  • 1 1/2 cup egg whites, (about 12)
  • 3 cup sugar, (1 1/2 pounds)
  • 6 tablespoon butter, (3 ounces)
  • 1/4 teaspoon salt
  • 1 1/2 teaspoon vanilla
  • 2 1/4 quart soft fine bread crumbs, (18 ounces)
  • 3 No.2-1/2 cans greengage plums, (10 1/2 cups)

Directions

  1. Scald milk and water.
  2. Pour over the egg whites, which have been slightly beaten.
  3. Combine sugar, butter, salt, vanilla, bread crumbs and the plums, which have been drained and cut in pieces (save the juice for the sauce).
  4. Add the bread crumb mixture to the milk and egg mixture.
  5. Beat well.
  6. Fill buttered pudding molds, set in pan of hot water, and bake in a moderate oven (350f) about 45 minutes or until, when tested with a silver knife, the knife comes out clean.
  7. Remove from pudding molds and serve with plum sauce.
