Western Ranch Meat Loaf

Ingredients

  • 2 pound ground beef
  • 2 eggs
  • 1 medium onion
  • 3/4 cup diced celery
  • 3 cup soft breadcrumbs
  • 1/4 cup lard
  • 1/2 cup water
  • 1/4 cup diced green pepper
  • 1/2 cup tomato juice
  • 1 tablespoon salt
  • 2 tablespoon melted butter

Directions

  1. Chop onion.
  2. Brown onion and celery in lard.
  3. Combine with green pepper, salt, eggs, bread crumbs and water to makc a dressing.
  4. Add half of the dressing (1 1/2 cups) to the meat, mixing well.
  5. Pat out half the meat mixture in a two-quart loaf pan.
  6. Cover with remaining dressing, then top with remaining meat mixture.
  7. Bake in a moderate oven (350° f) 1 1/4 hours.
  8. Baste twice with tomato juice and butter to keep loaf moist.
Note: Serve with Creamed Potatoes, Spiced Beets
