Veal Supreme

Ingredients

  • 2 pound veal, shoulder, diced
  • 2 tablespoon lard
  • 1 clove garlic
  • 1/2 cup water
  • 1/2 pound noodles
  • 1/4 pound almonds
  • 2 tablespoon butter
  • 1 tablespoon poppy seeds

Directions

  1. Brown veal in hot lard with garlic.
  2. Remove garlic clove.
  3. Add water, cover and simmer until tender, 30 to 45 minutes.
  4. Cook noodles in boiling salted water for 20 minutes.
  5. Drain.
  6. Blanch the almonds, slice lengthwise into thin strips.
  7. Brown in butter and add to the noodles.
  8. Mix thoroughly and arrange in a ring on a large platter.
  9. Fill the center with the cooked veal mixture, pour liquid from the veal over the noodles and sprinkle with poppy seeds.
