Uncooked Green Tomato Chow Chow
Ingredients
- 1 quart (6 to 7 medium-sized) finely chopped green tomatoes
- 1/2 cup finely chopped green pepper
- 1/4 cup salt
- 3 cup finely chopped cabbage
- 1 tablespoon dry mustard
- 1/2 cup sugar
- 1/2 cup finely chopped onion
- 1 tablespoon celery seed
- 2 tablespoon horseradish
- 1 cup vinegar
Directions
- Sprinkle layers of tomatoes, cabbage, onion, and green pepper with salt ; let stand overnight.
- In the morning squeeze vegetables dry.
- Add other ingredients.
- Pour into clean jars and cover.
- Kept in refrigerator or other place as cold, relish will keep from 2 to 3 weeks.
