Tripe Oysters
Serve with Creamed Onions, Whole Kernel Corn
Ingredients
- 1 pound fresh beef tripe
- fine bread or cracker crumbs
- salt
- 1 egg, beaten
- pepper
- 2 tablespoon cold water
Directions
- Clean tripe carefully and simmer 1 hours in water to cover, until tender.
- Drain.
- Sprinkle with salt and pepper and cut into oblong pieces the size of an oyster.
- Dip in bread crumbs, then in beaten egg to which has been added cold water, then dip in crumbs again.
- Fry in hot lard 350° f for 2 minutes on each side.
