Tripe Oysters

Serve with Creamed Onions, Whole Kernel Corn

Ingredients

  • 1 pound fresh beef tripe
  • fine bread or cracker crumbs
  • salt
  • 1 egg, beaten
  • pepper
  • 2 tablespoon cold water

Directions

  1. Clean tripe carefully and simmer 1 hours in water to cover, until tender.
  2. Drain.
  3. Sprinkle with salt and pepper and cut into oblong pieces the size of an oyster.
  4. Dip in bread crumbs, then in beaten egg to which has been added cold water, then dip in crumbs again.
  5. Fry in hot lard 350° f for 2 minutes on each side.
