Tomato Ketchup

Ingredients

  • 1 peck tomatoes
  • 1 tablespoon red pepper
  • 1 tablespoon black pepper
  • 1 teaspoon whole cloves
  • 1 tablespoon ground allspice
  • 1 teaspoon ground mace
  • 2 tablespoon mustard seed
  • 2 tablespoon celery seed
  • 4 tablespoon salt
  • 1 quart vinegar

Directions

  1. Cut up the tomatoes and boil until quite soft.
  2. Then strain through a sieve until nothing remains but skin and seeds.
  3. To this liquid add the spices, vinegar, etc, and boil until quite thick.
  4. Bottle while hot, and if tightly corked will keep for two years without sealing.
