Strawberry Tapioca Parfait

Yield: 8 servings

Ingredients

Directions

  1. Whip egg white until foamy.
  2. Add 2 tablespoons sugar, 1 at a time; continue beating until mixture stands in very soft peaks.
  3. Set aside.
  4. Mix egg yolk with a small amount of the milk in 1 quart saucepan.
  5. Add remaining milk, the tapioca, remaining sugar, salt, and nutmeg.
  6. Stir over medium heat until mixture comes to a boil.
  7. Pour small amount of hot mixture into beaten egg white; blend.
  8. Add remaining mixture quickly, stirring constantly.
  9. Add vanilla, lemon juice, and peel.
  10. Cool; stir after 15 or 20 minutes.
  11. Fold into whipped cream.
  12. Fill parfait glasses with alternate layers of pudding and strawberries.
  13. Top with additional berries and whipped cream.
