Steak with Spanish Sauce
Ingredients
- 1 1/2 pound round or flank steak
- 1 tablespoon minced celery leaves, or celery
- 2 tablespoon vinegar
- 1 1/2 teaspoon salt
- 1 small green pepper, minced
- 1/4 teaspoon pepper
- 1 onion, chopped
- 2 tablespoon lard or meat drippings
- 1 tablespoon minced parsley
- 2 cup tomato soup or tomato puree
Directions
- Score steak on both aides.
- Cover with mixture of vinegar, salt, pepper, onion and other minced vegetables and let stand for an hour or more.
- Sear meat in drippings or lard.
- Place in shallow baking dish with mixture in which meat has soaked.
- Pour tomato soup or puree over meat and bake for 2 hours at 325°f, or until meat is tender.
