Steak with Spanish Sauce

Ingredients

  • 1 1/2 pound round or flank steak
  • 1 tablespoon minced celery leaves, or celery
  • 2 tablespoon vinegar
  • 1 1/2 teaspoon salt
  • 1 small green pepper, minced
  • 1/4 teaspoon pepper
  • 1 onion, chopped
  • 2 tablespoon lard or meat drippings
  • 1 tablespoon minced parsley
  • 2 cup tomato soup or tomato puree

Directions

  1. Score steak on both aides.
  2. Cover with mixture of vinegar, salt, pepper, onion and other minced vegetables and let stand for an hour or more.
  3. Sear meat in drippings or lard.
  4. Place in shallow baking dish with mixture in which meat has soaked.
  5. Pour tomato soup or puree over meat and bake for 2 hours at 325°f, or until meat is tender.
Note: Serve with Escalloped Potatoes
