Soup with Pinto or Great Northern Beans

Ingredients

  • 1 cup dried beans
  • 1/4 cup chopped onion
  • 2 cup water
  • salt
  • pepper
  • 2 ounce salt pork, diced

Directions

  1. Wash the beans well, and soak overnight in water to cover.
  2. In the morning add 2 cups more water, cook the beans until tender, and put them through a sieve or colander.
  3. Fry the diced salt pork until crisp, remove from the fat, and add to the bean pulp.
  4. Brown the onion in the salt pork fat; stir into the bean pulp.
  5. Add hot water to give the -proper consistency, and salt and pepper to taste.
  6. Serve very hot.
  7. If available, 1/2 cup of chopped peanuts may be added for variation and extra food value.
  8. Or pour this soup over toast covered with sliced browned onions, and sprinkle a little grated cheese over the top.
