Smoked Salmon with Sour Cream Cucumber

Ingredients

  • 2 medium size cucumbers
  • 1/4 cup salt
  • 1/2 cup sour cream
  • 3 tablespoon vinegar
  • 1 1/2 tablespoon minced chives
  • 3/4 teaspoon dried dill seed
  • 1 teaspoon salt
  • dash pepper
  • dash hot pepper sauce
  • smoked salmon, thinly sliced
  • buttered pumpernickel bread

Directions

  1. Peel cucumbers, slice thin and sprinkle with salt.
  2. Let stand a few minutes, rinse with cold water, drain well,.
  3. Mix sour cream with vinegar, chives, dill seed, salt, pepper, and pepper sauce.
  4. Combine with cucumber slices in a bowl, chill 2-3 hours.
  5. Serve with thin slices of smoked salmon and triangles of buttered pumpernickel bread.
