Salmon Bisque

Ingredients

  • 4 1/2 quart evaporated milk
  • 1 gallon water
  • 1 1/2 cup flour, (6 ounces)
  • 2 cup water
  • 3 pound cooked and canned salmon
  • 3 tablespoon salt, (1 1/2 ounces)
  • 3/4 teaspoon paprika
  • 3 tablespoon lemon juice
  • 1 cup butter, (1/2 pound)

Directions

  1. Scald milk and water.
  2. Mix flour and the 2 cups water to a smooth paste and stir in the scalded milk.
  3. Cook until slightly thickened.
  4. Remove skin and bones from salmon and separate into flakes.
  5. Add salt, paprika, lemon juice and butter.
  6. Add to sauce and heat just before serving.
