Salmon Bisque
Ingredients
- 4 1/2 quart evaporated milk
- 1 gallon water
- 1 1/2 cup flour, (6 ounces)
- 2 cup water
- 3 pound cooked and canned salmon
- 3 tablespoon salt, (1 1/2 ounces)
- 3/4 teaspoon paprika
- 3 tablespoon lemon juice
- 1 cup butter, (1/2 pound)
Directions
- Scald milk and water.
- Mix flour and the 2 cups water to a smooth paste and stir in the scalded milk.
- Cook until slightly thickened.
- Remove skin and bones from salmon and separate into flakes.
- Add salt, paprika, lemon juice and butter.
- Add to sauce and heat just before serving.
