Escalloped Salmon

Ingredients

  • 2/3 cup flaked salmon
  • 1 hard-cooked egg
  • 1 tablespoon butter
  • 1 teaspoon lemon juice
  • 1 tablespoon flour
  • 3 tablespoon chopped sour pickle
  • 2/3 cup milk
  • 1/2 teaspoon minced parsley
  • 1/2 teaspoon salt
  • 4 tablespoon cracker crumbs
  • 1/4 teaspoon paprika
  • 1 tablespoon butter

Directions

  1. Melt the butter, add the flour and mix well.
  2. Add the milk and cook one minute.
  3. Add the salmon, salt, paprika, egg diced, lemon juice, pickle and parsley.
  4. Mix thoroughly with a silver fork, being careful not to let the mixture get pasty.
  5. Pour into a well-buttered baking dish, melt the butter and add the crumbs.
  6. Place buttered crumbs on the top.
  7. Bake twenty- five minutes in a moderate oven.
