Rolls
Ingredients
- 2 cup sugar, (1 pound)
- 1/4 cup salt, (2 ounces)
- 2 cup shortening, (1 pound)
- 3 quart boiling water
- 1 quart evaporated milk
- 4 ounce compressed yeast
- 13 quart flour, (13 pounds)
Directions
- Measure sugar, salt and shortening into mixing bowl.
- Add water and stir until shortening is melted and sugar dissolved.
- Add milk.
- When lukewarm, add yeast that has been softened in 1 cup lukewarm water.
- Add half the flour.
- Beat well, then add remaining flour.
- Knead until smooth and elastic.
- Cover and let rise in a greased bowl in warm place until a little more than doubled in bulk, about 2 hours.
- Punch dough down.
- Allow about 15 minutes to rise, then shape and place on greased baking sheets.
- Let rise again until doubled in bulk, about 1 hour.
- Bake in a hot oven (425f).
- Brush tops with melted butter.
- Sweet rolls variation: increase the sugar and shortening each to 1 quart (2 pounds); butterflies, neckties, twists, cinnamon rolls, scrolls, and snails may be made from this dough; yields 21 dozen rolls.
