Potato Croquettes

Ingredients

  • 2 cup cold mashed potatoes
  • 1 tablespoon melted butter
  • 1 egg
  • 1 grated onion
  • 1 tablespoon cream
  • pepper
  • salt
  • pepper
  • parsley
  • marjoram

Directions

  1. Mix 2 large cups cold mashed potatoes with melted butter, egg, onion, and cream.
  2. Season rather highly with pepper, salt, parsley and sweet marjoram.
  3. Form in croquettes, brush with beaten egg, dip in cracker dust, and fry in hot lard until a golden brown.
