Pineapple Sherbet

Ingredients

  • 3 quart crushed pineapple, or 1 No.10 can
  • 2 quart water
  • 1/2 cup lemon juice
  • 1 1/2 quart sugar, (3 pounds)
  • 1 quart evaporated milk

Directions

  1. Combine pineapple, water, lemon juice and sugar.
  2. Freeze to a mush in a 1:6 salt-ice mixture.
  3. Whip the evaporated milk, which has been thoroughly chilled, and add to the partially frozen mixture.
  4. Continue freezing until stiff.
