Pineapple Cornmeal Muffins

Ingredients

  • 1/2 cup crushed pineapple, drained
  • 3/4 cup yellow corn meal
  • 1 cup sifted flour
  • 3 teaspoon baking powder
  • 2 tablespoon sugar
  • 1 teaspoon salt
  • 1 egg
  • 1/3 cup water
  • 1/3 cup pineapple, syrup
  • 3 tablespoon melted shortening

Directions

  1. Drain crushed pineapple.
  2. Mix and sift dry ingredients.
  3. Beat egg, add pineapple syrup and water.
  4. Stir into flour mixture.
  5. Stir in quickly the shortening and drained crushed pineapple.
  6. Fill greased medium-sized muffin pans 2/3 full.
  7. Bake in moderately hot oven (400f) about 20 to 25 minutes until lightly browned.
