Oxtail Soup

Ingredients

  • 1 pound oxtails
  • 1 cup diced carrots
  • salt
  • pepper
  • flour
  • 1 cup shredded cabbage
  • 2 tablespoon lard
  • 4 cup water
  • 1/4 cup minced onion
  • 3 allspice berries

Directions

  1. Cut oxtails into small pieces, season and roll in flour.
  2. Brown in hot lard in a deep heavy kettle.
  3. Add water and allspice.
  4. Cover.
  5. Simmer 2 to 3 hours or until meat drops from bones.
  6. Strain.
  7. Remove all meat from bones.
  8. To broth, add meat, vegetables and more water if needed.
  9. Simmer 20 minutes or until vegetables are tender.
  10. Serve very hot.
  11. For a thicker soup, cook 1/2 cup rice in the broth with the vegetables.
Note: Serve with Chopped Green Salad, Bread Sticks
