Our Way of Cooking Kidney

Ingredients

  • kidney
  • water
  • butter
  • pepper
  • salt

Directions

  1. Trim every particle of fat from a fresh beef kidney and cut the flesh into small pieces.
  2. Wash in clear cold water, and drain lightly, then put in a frying pan, cook about five minutes, turning all the time with a fork.
  3. Then add a pretty large piece of butter, some pepper and salt to suit the taste.
  4. Let this all cook a few minutes and turn out on a hot dish.
  5. Serve immediately.
  6. Particular care must be taken to add no more water to the kidney than adheres to it after draining.
