
Our Way of Cooking Kidney
Ingredients
- kidney
- water
- butter
- pepper
- salt
Directions
- Trim every particle of fat from a fresh beef kidney and cut the flesh into small pieces.
- Wash in clear cold water, and drain lightly, then put in a frying pan, cook about five minutes, turning all the time with a fork.
- Then add a pretty large piece of butter, some pepper and salt to suit the taste.
- Let this all cook a few minutes and turn out on a hot dish.
- Serve immediately.
- Particular care must be taken to add no more water to the kidney than adheres to it after draining.
