Orange Marmalade

Ingredients

  • 3 oranges
  • 1/4 grapefruit
  • 2 lemons
  • sugar

Directions

  1. Wash thoroughly the rinds of the fruits.
  2. Weigh the fruit, and slice it evenly.
  3. To each pound of fruit, add one quart of cold water.
  4. Let the mixture stand for twenty-four hours.
  5. Cook slowly for one hour.
  6. Drain.
  7. Weigh the cooked fruit, and add an equal weight of sugar.
  8. Cook with the sugar for thirty minutes, or until it stiffens slightly when tried on a dish.
  9. Pour into sterilized jelly glasses.
  10. When cool seal with hot paraffin.
