Montgomery Pie

Ingredients

  • 1/2 cup molasses
  • 1 cup water
  • 1/2 cup sugar
  • 2 tablespoon flour
  • 1 egg
  • 1/2 lemon, juice and rind
  • 1 teaspoon baking powder
  • 2/3 cup sugar
  • 1 cup milk
  • 1/4 cup butter
  • 1 egg, beaten
  • 1 1/2 cup flour

Directions

  1. Combine molasses, water, sugar, flour, egg, lemon juice and rind, and pour into a 9 inch, unbaked pie shell.
  2. Blend butter and sugar, add egg and beat well.
  3. Add milk and the sifted dry ingredients a little at a time.
  4. Spread topping over mixture in the pie shell.
  5. Bake in moderate oven (350f) for 40 minutes.
