Lemon Pie Filling

Ingredients

  • 2 egg yolks
  • 1 cup sugar
  • 1 1/2 cup water
  • 1/2 teaspoon salt
  • 1 teaspoon grated lemon rind
  • 1 large lemon, worth of juice
  • 1/2 cup flour
  • 1 teaspoon butter

Directions

  1. Beat the egg yolks, add the sugar gradually and beat; add the flour, salt, water, lemon juice and rind.
  2. Cook in a double boiler until it thickens.
  3. Pour into the pastry shell, cover with meringue and bake in a moderate oven until the meringue is brown.
