Indian Croutes

Ingredients

  • 2 ounce smoked cooked haddock, and lobster
  • 1 shallot
  • 1/2 ounce margarine
  • 1 teaspoon curry powder
  • seasoning
  • 1 tablespoon cream
  • 1 tomato
  • 6 rounds of buttered toast
  • chopped parsley

Directions

  1. Chop the haddock and shallot.
  2. Melt the fat in a pan, fry the shallot and add the curry powder and seasoning.
  3. Stir over the heat for a few seconds, and add the haddock.
  4. Mix well, and stir in the cream.
  5. Place a slice of tomato on each piece of toast, pile the mixture on top, put in the oven to make really hot, and serve sprinkled with parsley.
