Hot Water Sponge Cake

Ingredients

  • 2 egg yolks
  • 1 teaspoon grated rind lemon
  • 1 cup sugar
  • 2 egg whites
  • 1/2 cup boiling water
  • 1 cup flour
  • 1 tablespoon lemon juice
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Directions

  1. Beat the yolks until thick and lemon colored, add the sugar gradually and beat for two minutes.
  2. Add the flour, sifted with the baking powder, and salt.
  3. Add the boiling water, lemon juice, and grated rind.
  4. Beat with a dover egg-beater, two minutes.
  5. Fold in whites of the eggs.
  6. Bake thirty-five minutes in a moderate oven in an unbuttered pan.
  7. Do not cut sponge cake, except through the crust, then break apart.
