Hot Dutch Potato Salad

Ingredients

  • 4 slices bacon
  • 1/8 teaspoon pepper
  • 1/2 cup chopped onion
  • 1 teaspoon sugar
  • 1/2 cup chopped green pepper
  • 1/4 cup vinegar
  • 1 quart hot cubed, cooked potatoes
  • 1 teaspoon salt
  • 3 hard boiled eggs
  • 1/4 cup grated raw carrot

Directions

  1. Dice bacon and pan fry.
  2. Add chopped onion and green pepper.
  3. Cook 3 minutes.
  4. Add vinegar, salt, pepper, sugar and beaten egg.
  5. Cook slightly.
  6. Add cubed potatoes, grated carrot and diced hard-cooked eggs.
  7. Blend and serve hot.
