Fruit Cake

Ingredients

  • 1 pound butter
  • 1 pound flour
  • 1 pound sugar
  • 10 eggs
  • 1 tablespoon vanilla
  • 2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 cup cream, or milk
  • 1 1/2 pound raisins, seeded and chopped
  • 1 1/2 pound currants, washed, picked, and dried
  • 3/4 pound citron, wash, wiped dry, and cut in small, thin pieces
  • 1/2 cup cold coffee

Directions

  1. Beat the butter and sugar to a cream.
  2. Whisk the eggs until thick, and add them by degrees with the spices and vanilla.
  3. Then stir in cream and one-fourth the flour.
  4. Add the coffee, and the remainder of the flour, half at a time.
  5. Lastly, add the fruit, and beat all well together.
  6. Butter your pan and line with white paper; put in the mixture, spread it smooth over the top with a knife, and bake in a moderate oven about four hours.
