Escalloped Eggs with Cheese

Ingredients

  • 3 hard-cooked eggs
  • 1 cup soft bread crumbs
  • 2 tablespoon butter
  • 1/2 cup cheese, cut fine
  • 2 tablespoon flour
  • 1 teaspoon salt
  • 1 cup milk
  • 1 teaspoon parsley

Directions

  1. Melt the butter, add the flour and mix well.
  2. Gradually add the milk.
  3. Cook one minute, add the cheese and the eggs cut in slices.
  4. Add the parsley and the salt.
  5. Place one-half the crumbs in the bottom of a well-buttered baking dish, add the egg mixture and cover with the remaining crumbs.
  6. Dot with butter, and brown in a moderate oven.
