Doughnuts II

Ingredients

  • 1 cup evaporated milk
  • 1 cup water
  • 2 tablespoon vinegar or lemon juice
  • 6 tablespoon shortening, (3 ounces)
  • 2 cup sugar, (1 pound)
  • 4 eggs, beaten
  • 8 1/2 cup flour, (2 pounds, 2 ounces)
  • 1/4 teaspoon salt
  • 1 teaspoon nutmeg
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda

Directions

  1. Combine milk, water and vinegar.
  2. Cream shortening, add sugar and continue creaming until light and fluffy.
  3. Add beaten eggs and mix thoroughly.
  4. Sift flour, then measure.
  5. Resift with remaining dry ingredients, and add alternately to shortening-sugar mixture with the soured milk.
  6. Roll dough to 3/8 inch thickness, cut with doughnut cutter and fry in deep, hot fat (365f).
  7. Drain on unglazed paper and roll in confectioners or granulated sugar.
