Creamed Lobster on Toast

Ingredients

  • 2/3 cup lobster
  • 2 tablespoon flour
  • 2 tablespoon butter
  • 1 cup milk
  • a few grains of cayenne pepper
  • 1/2 teaspoon lemon juice
  • 1 egg yolk
  • 1/3 teaspoon salt
  • 3 slices of toast

Directions

  1. Melt the butter, add the salt, cayenne and flour.
  2. Gradually add the milk, cook until thick, stirring constantly unless in double boiler.
  3. Add the egg-yolk.
  4. Add the lobster, separated with a fork, and the lemon juice.
  5. Serve very hot on toast, garnished with parsley.
