Cream of Pea Soup

Ingredients

  • 1 cup peas
  • 2 tablespoon butter
  • 1 cup water
  • 2 cup milk
  • 1/4 teaspoon sugar
  • 1 teaspoon salt
  • 2 tablespoon four
  • 1/4 teaspoon paprika

Directions

  1. Cook the peas, water and sugar slowly for fifteen minutes.
  2. Strain, and rub all the pulp through the strainer.
  3. Melt the butter, add the flour, salt and paprika.
  4. Mix thoroughly and gradually add the milk.
  5. Boil one minute and add the pulp and liquid from the peas.
  6. Cook one minute.
  7. Serve in hot soup plates or bouillon cups.
