Cottage Cheese and Carrot Salad

Ingredients

  • 2 1/2 quart cottage cheese
  • 1 cup minced parsley, or chopped cabbage
  • 2 1/4 quart grated carrots
  • 1 tablespoon salt

Directions

  1. Combine all ingredients, making sure that the cabbage and carrots are finely chopped or shredded.
  2. Serve on crisp lettuce leaves.
