Corn Meal Griddle Cakes

Ingredients

  • 2 cup corn meal
  • 2 eggs
  • 1/2 cup flour
  • 2 cup buttermilk
  • 1 teaspoon baking powder
  • 2 tablespoon butter
  • 1 teaspoon soda
  • 1 1/2 teaspoon salt

Directions

  1. Sift flour, corn meal, baking powder, soda and salt.
  2. Sift again.
  3. Beat eggs well, add the buttermilk and combine with the dry ingredients.
  4. Beat until smooth and add melted butter.
  5. Bake on hot griddle.
  6. The 'dutch' housewife rubbed the griddle with the flat part of a raw turnip cut in half, to prevent sticking.
  7. Some used a little cloth bag filled with salt.
  8. Serve with brown sugar or syrup.
