Corn-Meal and Wheat Bread

Ingredients

  • 1 1/2 cup milk or water, or mixture of two
  • 1/2 compressed yeast cake, , or 1/2 cup less of the liquid and 1/2 cup liquid yeast
  • 1/2 teaspoon salt
  • 1 tablespoon sugar, or syrup
  • 1 cup corn meal
  • 2 cup wheat flour

Directions

  1. Pour 1 1/4 cup of the water over the meal, salt, sugar, and shortening, if used; heat the mixture gradually to the boiling point or nearly to it; cook twenty minutes.
  2. This can be done best in a double boiler; the water is sufficient only to soften the meal a little.
  3. Allow the meal to cool to about room temperature, add the flour, and the yeast mixed with the rest of the water, or the 1/2 cup of liquid yeast.
  4. Knead thoroughly, let rise until double its bulk, make into a loaf, let rise in pan, bake 45 to 50 minutes.
  5. Note: when corn is added, less time is needed for the rising.
