Codfish Balls

Ingredients

  • 1 cup raw salt fish
  • 1 egg, well-beaten
  • 2 cup raw potatoes
  • 1/4 teaspoon pepper
  • 1 teaspoon butter
  • more salt, if needed
  • 1/2 cup cracker crumbs
  • 1 tablespoon water

Directions

  1. Shred the fish.
  2. Pare and quarter potatoes.
  3. Place the fish and potatoes in a stewpan and cover with boiling water.
  4. Boil twenty-five minutes or till the potatoes are soft.
  5. Do not boil too long or they will become soggy.
  6. Drain well, mash and beat until light.
  7. Add butter, seasoning and egg.
  8. Shape, roll in crumbs, egg mixed with water, more crumbs, and fry in deep fat.
  9. These may be shaped into flat cakes, rolled in flour and sautéd in hot fat.
  10. Garnish with parsley.
