
Chicken Hawaii
Ingredients
- 2 chicken, thighs per person
- 3 slices tinned pineapple, per person
- 1/2 pepper, per person
- 1 onion
- curry powder
- corn flour
Directions
- Place a pineapple slice under each chicken piece s in bottom of baking tray.
- Put tray in hot oven and allow to start cooking whilst you prepare sauce.
- Chop peppers and onions and place in pan with small amount of oil.
- Stir over low heat until soft.
- Add rest of pineapple chopped to pan and pineapple juice from tins.
- Add curry powder and corn flour to about 1 cup water per person.
- Mix all together and simmer until consistency of thick cream.
- Pour over chicken.
- Cover tray with foil and cook for at least an hour (check chicken before serving).
- Serve with rice.
