Celery au Gratin

Ingredients

  • 1 cup cooked diced celery
  • 1/2 cup milk, and celery stock
  • 1 tablespoon butter
  • 3 tablespoon grated cheese
  • 1 tablespoon flour
  • 1/8 teaspoon paprika
  • 1/4 teaspoon salt

Directions

  1. Cook the celery in a small amount of water at a low temperature, as too fast boiling makes it tough.
  2. Simmer until tender.
  3. Save some water for the milk and celery stock.
  4. Add the milk and stock, pepper and salt.
  5. Melt the butter, add the flour and blend well.
  6. Add the cheese.
  7. Allow to cook until it is the consistency of a thin vegetable white sauce.
  8. Add the celery.
  9. Place in a hot oven for fifteen minutes.
