Cabinet Pudding
Ingredients
- 1 dozen almonds, blanched and pounded
- 1/2 dozen English walnut, cut or broken into particles
- 1/2 black walnuts, cut or broken into particles
- small piece citron, cut very fine
- 1 cup raisins, boiled till tender and seeded
- 1 quart milk, leave enough to wet 3 1/2 tablespoons cornstarch
- 3 1/2 tablespoon cornstarch
- 2 eggs
- 4 tablespoon sugar
- 1 egg yolk
- 1 cup cream
- 1 1/2 tablespoon sugar
- 1 teaspoon vanilla
Directions
- Mix first five ingredients in a bowl and prepare the following pudding: boil milk, beat eggs and sugar into cornstarch and add to milk.
- When the cornstarch is thoroughly cooked, take from the fire, flavor with lemon extract, and stir in the nuts, citron, and raisins.
- Then pour into cups, adding a macaroon to each cup.
- When cold turn out of the cups and serve with the following sauce : beat the yolk of an egg and 1 1/2 tablespoonfuls sugar together, add a large cupful cream and a teaspoonful vanilla.
- If the cream is too rich, part milk may be used.
- The white of an egg beaten very light, added, is an improvement.
