Butterscotch Pie

Ingredients

  • 1 1/4 quart brown sugar, (1 2/3 pounds)
  • 3/4 cup water
  • 1 2/3 cup flour, (6 2/3 ounces)
  • 1 1/4 quart cold water
  • 10 egg yolks
  • 1 1/4 quart evaporated milk
  • 2 1/2 teaspoon vanilla

Directions

  1. Boil sugar with 3/4 cup water to a thick syrup.
  2. Make a smooth paste of flour and the 1 1/4 quarts cold water.
  3. Add to the syrup and boil 1 minute, stirring constantly.
  4. Beat egg yolks, add evaporated milk and pour sugar mixture slowly into this.
  5. Set over boiling water and cook, until thickened, stirring all the time.
  6. Add vanilla.
  7. Cook.
  8. There will be about 2 1/4 quarts filling.
  9. Pour into cool baked pie shells.
  10. Cover with meringue made from the 10 egg whites and brown.
