Butterscotch Pie
Ingredients
- 1 1/4 quart brown sugar, (1 2/3 pounds)
- 3/4 cup water
- 1 2/3 cup flour, (6 2/3 ounces)
- 1 1/4 quart cold water
- 10 egg yolks
- 1 1/4 quart evaporated milk
- 2 1/2 teaspoon vanilla
Directions
- Boil sugar with 3/4 cup water to a thick syrup.
- Make a smooth paste of flour and the 1 1/4 quarts cold water.
- Add to the syrup and boil 1 minute, stirring constantly.
- Beat egg yolks, add evaporated milk and pour sugar mixture slowly into this.
- Set over boiling water and cook, until thickened, stirring all the time.
- Add vanilla.
- Cook.
- There will be about 2 1/4 quarts filling.
- Pour into cool baked pie shells.
- Cover with meringue made from the 10 egg whites and brown.
