
Brown Candy
Ingredients
- 3 cup sugar
- 1 cup cream
- 1/8 teaspoon soda
- 1/4 cup butter
- 1/2 teaspoon vanilla
- 1 pound pecan, meats
Directions
- Melt 1 cup sugar in a heavy skillet over iow heat, stirring constantly until melted and light caramel-colored.
- Pour slowly into saucepan containing 2 cups sugar and cream.
- Cook to firm ball stage (260f), stirring constantly.
- Remove from heat.
- Add soda and stir vigorously.
- Add butter and cool for 10 minutes.
- Add vanilla and beat until mixture is thick and loses shininess.
- Blend in pecan.
- Spread in greased pan and cut in 1-inch squares,.
