Bettina's Apricot Cobbler

Ingredients

  • 1 cup cooked and sweetened apricots
  • 1/3 teaspoon salt
  • 2 tablespoon butter
  • 1 tablespoon flour
  • 1/3 cup milk
  • 1/2 teaspoon cinnamon
  • 1/3 cup sugar
  • 1 cup flour
  • 1/2 cup water
  • 2 teaspoon baking powder
  • 1/2 teaspoon vanilla

Directions

  1. Mix the apricots, one tablespoon flour and cinnamon.
  2. Mix and sift together flour, baking powder and salt.
  3. Cut in the butter with a knife.
  4. Add the milk until a soft dough is formed.
  5. Place the apricot mixture in a baking-dish and the dough on top of the apricots.
  6. Cook the water and sugar together for three minutes.
  7. Add the vanilla.
  8. When the cobbler has baked fifteen minutes pour syrup over it.
  9. Bake ten minutes more in a moderate oven.
